It really is the Instant Pot

resized_20170220_182702I enjoy cooking but with 4 little ones it is hard to find enough time in the kitchen. I am always forgetting to thaw meat out for dinner or start the potatoes 45 minutes before supper time. Then (drum roll) the Instant Pot found its way into our kitchen. It really does live up to its name. Everytime I use it I am not disappointed. It makes cooking faster, easier, less messy and recipes that usually take an hour or more are done in minutes. You do not have to be a chef or even a good cook to create delicious meals. Spaghetti squash pictured above usually takes about an hour in the oven but I never remember to bake until I need dinner in 15 minutes. Only 7 minutes in my Instant pot and it’s done! I have not read a review or article yet that doesn’t praise the Instant Pot. What’s for dinner? There are so many options!

Looking for the Positive

Melon Color Lipstick


Have you ever had something not turn out as you hoped it would?  Maybe you were really excited about something, only to be disappointed?  

This happened to me recently when I ordered a new makeup primer for my face.  I was excited that my purchase came with complimentary samples of some additional items, including a full-sized lipstick.  I love trying new cosmetics, so free is always a plus for obtaining fun new products.

But I had some issues with my order when they told me that they were out of the pretty Pink Parfait lipstick color that I wanted.  All they had left was Melon, a light orangey color.  I was disappointed.  With my light skintone, I have little use (or desire) for an orange tone lipstick.  A good old fashioned, classy pink is more my personal style.  

But then I started trying to think about some of the positive aspects of my order, even with the limited free gift options.  If I was going to ever try orangey lipstick, what better way to do it than when it’s free?  

And at least they still had a lipstick to send me.  I could have received nothing.  Soon, even with my disappointment, I started feeling a little bit better about my free gift.  

Now this may perhaps seem like a very small (and shallow) example, but think back to a time when you had a disappointment.  How did you respond?  Did you get angry?  Despair?  Did you stop to look for the positive – any positive – in the situation?

We serve a risen Saviour Who will never disappoint us.  No matter how disappointing life may seem to get in the major (and minor) moments, remember to look to the One Who has conquered death itself to set us free.
And I’m still waiting to see how things turn out with the orangey lipstick… 🙂

It’s the week before Thanksgiving, and I’m already starting to think about all of the delicious food we’ll have at the house next week.


Thanksgiving is such a wonderful holiday.  It’s a time to get together with family and friends, and remember all of the goodness that God has given to us.  And to eat of course!


Family is so important, and the holidays is a great time to catch up with our loved ones over a piping hot plate of steaming green beans, fresh buttered rolls, tangy cranberry sauce, and, of course, juicy sliced turkey!  (Or ham, as my family tends to prefer.)


Often, as girls, we’ll find ourselves in the kitchen on this special holiday to help prepare the goodness that will be served at the table.


And, of course, we can’t forget about dessert.  Pumpkin pie is one of our family favorites.  It’s probably the only time of year that I eat it.


My sister came across a recipe for an easy, no-bake version of this special classic.


I’d like to share it with you – it’s really yummy when topped with whipped cream!  🙂

14 oz can sweetened condensed milk

1 egg, slightly beaten

1 tsp ground cinnamon

½ tsp ground ginger

½ tsp ground nutmeg

½ tsp salt

2 T water

1 envelope Knox unflavored gelatin

16 oz can pumpkin

Graham cracker crust

Blend milk, egg, spices, & salt in bowl.  Sprinkle gelatin over water in medium pot.  Let stand 1 minute.  Then stir over low heat for 2 minutes.

Blend milk mixture, stir 5 minutes or til slightly thickened.

Blend in pumpkin. Pour into crust.

Chill until firm.  Top with whipped cream.

Simple Things

Brown bag & stones

Earlier this week, I was teaching 2 little girls in Sunday School about how God provided manna to His people when they were wandering in the wilderness after being freed from Egyptian slavery.

It never ceases to amaze me what these girls find amusing.  To demonstrate the provision of the manna, I brought some simple clear beads and 2 brown paper bags.  I scattered the beads on the floor and watched in amazement as the girls excitedly began gathering up the “manna”.  

It was so simple, yet they seemed to find so much enjoyment in it.  They didn’t need loud toys with batteries or an engaging animated film.  All they needed were a few beads and a brown paper sack.  

I just thought that was so amazing as I watched them.  It was a joyful moment taking a peek at life through the eyes of a pair of young girls.  

God is so thoughtful to give us such simple pleasures in our daily lives.
